The deviled egg is a true fan favorite for parties, gatherings, and appetizer trays. In a similar fashion, I don't think I have ever met someone who doesn't like buffalo sauce. I married the two together in these super tasty and zesty buffalo style deviled eggs.
I used to actually tell people that I didn't mind winter. I guess it made sense. Winter didn't really hinder my life back then as much as it does now, when the highlight of my day is leaving the house to go get the mail. It's not the cold I mind as much as the gloom and lack of sun. Seasonal depression is totally real my friends but alas, there is light at the end of the tunnel (no pun intended). Daylight savings time comes and literally rocks my world. I woke up last Sunday like a kid on Christmas morning just because it would still be light out at 5pm. It's the little things that really get you going in your late twenties.
Tomorrow is the first day of spring and the temperature is going to be 61 degrees! I've got warm weather and Easter on my mind so naturally I had to make deviled eggs. Seriously, every time I hard boil eggs I think of decorating them for Easter which is probably why I associated deviled eggs with Spring. Speaking of, decorating eggs was so fun and cool. Perhaps I'll buy a kit for myself this year.
When it comes to making deviled eggs you obviously have to master the hard boiled egg. Nobody wants to eat a deviled egg that has been mutilated. I used to hardcore struggle with making hard boiled eggs. I would peel off the shell and literally end up with just a yolk. Finally, the perfect part about these deviled eggs is the buffalo sauce. I find that the perfect egg yolk mixture always needs a little tang. I used to actually add in pickle juice to my yolks whenever I made classic deviled eggs. This time I used buffalo sauce because let's be real, what isn't enhanced by a good helping of Frank's Red Hot sauce.
Ingredients:
9 hard boiled eggs
3 tbsp mayonnaise
2 tbsp greek yogurt
1 tsp dijon mustard
1 tbsp buffalo sauce like Frank's Red Hot
2 tbsp crumbled blue cheese
celery seed (for garnish)
paprika (for garnish)
diced fresh parsley (for garnish)
1. Slice each egg in half, lengthwise, and carefully remove the yolks with a spoon. Place yolks into a separate bowl.
2. Whisk together yolks with mayonnaise, yogurt, dijon mustard, and buffalo sauce. Spoon the yolk mixture back into the egg whites.
3. Garnish each egg with crumbled blue cheese. Sprinkle paprika and celery seed over each egg. Top with fresh parsley.
