Some crazy things went down in my household between the hours of 6:25pm and 7:08pm.
I work full time, which makes food blogging a bit of a challenge. Yesterday I regaled you with a story of how therapeutic cooking is for me. A peaceful time. I even likened it to going to the spa. This evening...that did not happen. At 6:30 I become super motivated to make a full dinner, but like always, as any food blogger knows, the dwindling daylight becomes an issue. I like to see it as a race. I had a full 2 pound piece of Salmon already cooked from last night in my fridge. This thing was massive. Like folded under itself in the package massive. Normally, it's a fight for who gets the tiny last piece of salmon from the 1/4 lb sashimi like shaving you usually get at the grocery store. Thank you Sam's Club for doing who knows what to their fish so I can get massive pieces for like twelve dollars. I also have strong feelings on farm raised vs. wild salmon but I'll save that for another day.
So, it was 6:30pm, I was done working and I was going to make salmon cakes, and I was going to get a picture of them. Because salmon cakes are cute and who doesn't want to learn how to make cute little salmon cakes? Tell me. I was so pumped, I was even singing. All day I had the song Without Love from Hairspray stuck in my head. I've never seen Hairspray but somehow my brain knew this song. Problem is I only knew one lyric "Life's like Doris Day at the Apollo." That didn't matter. I was belting out that tune.
6:35pm things are going smoothly, sun is high in the sky, we've got plenty of time here. 6:40pm...I'm cruising along here not a care in the world. 6:45pm ok some of my salmon cakes are breaking but I'm human. I'm sure Ina Garten has had a few break of hers too. (I take it back Ina you are queen and perfect). 6:50, sun is gone; massive clouds, thunder, it's dark. Ok I'll just make a few and take their picture.
I run up the stairs to grab my camera. "Life's like Doris Day at the Apollo." Run downstairs. Forgot my memory card. Run Upstairs. Insert memory card in the wrong way because I don't know how to use this camera I own. Memory card is stuck. Real stuck. Attempt to take memory card out with scissors because I am naive and do not understand the value of the items I purchase. Wait a minute....pliers! "Life's like Doris Day at the Apollo." What does this song even mean!!! I rummage through my brothers belongings to find some item that resembles half wrench half pliers. This tool does not work. Find pliers. Pliers work. Insert memory card incorrectly into the camera once again. Use pliers to get it out. Camera saved. Set the camera to auto because I have no clue how to use thing. Little flash thing keeps popping up and I keep pushing it down because IT'S NOT THAT DARK OUT OK.

Sometimes, life really is like Doris Day at the Apollo. I get frustrated because I work full time and can't devote my time to do this things I really love. Tonight I thought, there may be a chance that I am on the Truman Show and cameras are filming me as I run throughout my house singing one line of a show tune and pulling memory cards out of my camera with scissors. It would serve as a warning to others. Do not procreate with this one! Then I think about how the fancy polar seltzers were on sale yesterday and that American Ninja Warrior is on tonight and everything becomes ok again.
I guess I should tell you how amazing this salmon cakes really were, but I feel like I've already said to much. I based this recipe off of Ina Garten's recipe and like I mentioned above, she is queen, she does no wrong in life. So you can take my word for it :)

Ingredients:
1/2 pound fresh salmon already cooked and chilled. You can also use canned salmon.
4 tbsp olive oil
2 tbsp butter
2 tbsp capers
1/2 red bell pepper diced
1/2 yellow pepper diced
1/2 jalapeno finely diced
3/4 cup diced red onion
1/2 cup diced celery
1 tbsp old bay seasoning
1 tsp hot sauce
1/4 cup fresh parsley
1/2 cup panko bread crumbs
1/2 cup Italian bread crumbs
2 eggs beaten
3 tbs dijion mustard
1/2 cup mayonnaise
1 tbsp Worcestershire sauce
salt and pepper
Greek Yogurt Tarter Sauce
2 tablespoons relish
2 tablespoons chopped red onion.
2 teaspoons Dijon mustard
1tbsp fresh lemon juice
1/2 cup low-fat plain Greek yogurt
Coarse salt and ground pepper.
Method:
Heat butter on medium in large nonstick skillet. Cook the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Worcestershire sauce, Old Bay, salt and pepper over medium heat. Cook until the vegetables are soft. About ten minutes. Remove from heat.
Flake salmon in a large bowl and add in mayo, dijon mustard, and the eggs. Add in the breadcrumbs, and the veggie mixture and cover the salmon mixture and place it in the fridge to cool for 30 minutes (or if you are like me, skip this step).
Shape the salmon into patties. You can choose to make them bigger like burgers or smaller like sliders. I made mine about 1.5inches in diameter. Heat oil in a skillet over medium heat and fry the cakes for 4 - 5 minutes on each side. Keep warm in a 250 degree F oven.
To make the tarter sauce, combine all ingredients in a medium bowl and keep chilled in the fridge.
