Who is ready for Super Bowl?
Honestly, I am not much of a football fan. I live in New England so I am constantly hammered with Patriots adoration. I get it. They are good. Tom Brady is hot. However, my football appreciation doesn't spread much past binge watching Friday Night Lights.
When it comes to Super Bowl food though, that is something I can wrap my head around. Super Bowl Sunday is probably the countries largest cheat day, maybe aside from Thanksgiving. Probably the most popular food item is wings, which I am 100% down with. Basically I am down with buffalo sauce in general. Second, we just have all kinds of cheese. Huge fan. Melted, shredded, incorporated with chips. Fantastic. Third, we have all various forms of dips, most which also incorporate cheese so they earn a double check. Hands down, I am in it to win on the Super Bowl Food.

This year, I decided to change up things and make some sausage and peppers subs. When you are stuffing your face with wings...who doesn't want to add in a meat filled sandwich to the playing field? To be fair, I do associate sausage and peppers subs with sports at least. While going to school in Boston, I often indulged in street side "sangwich" of sausage and peppers. It was a magical sight to find one of these vendors barking out incoherent Boston squawk while flipping delicious Italian sausages on their hot griddles. Therefore, Sausage and Peppers remind me of baseball/Boston...Boston is a part of New England, therefore Go New England! I knew I would find a relation somewhere there.
1 lb (or five links) Hot Italian Sausage
1 red bell pepper sliced into thin strips
1 green bell pepper sliced into thin strips
1 red onion sliced
1 tbsp olive oil
1/2 cup marsala
1 14oz can diced tomatoes
5 Italian Sub Rolls
Heat olive oil in a large non-stick skillet. Cook sausages until browned on all sides (5 - 8 minutes). Remove sausage and wipe out any excess fat from the pan. Add in peppers and onions and cook for 10 minutes until both become soft and tender. Add in marsala wine and tomatoes. Slice the sausages into bite sized pieces and add back into the sauce. Cook for an additional 5 minutes, until sausages are all the way cooked through. Serve over pasta, or on italian sub sized rolls.
