A few weeks ago, I tried to explain "basic" to my Mom.
Me: "It's like the epitome of Starbucks."
Mom: "So like coffee?"
Me. "Well kind of. Have you heard of Pumpkin Spice Lattes?"
Mom: "So pumpkin coffee"
Me: "Exactly."
Pumpkin spice meets Tory Burch, meets infinity scarves, all buried under a pile of leaves, kicked up by some camel colored Uggs, making the most perfect Instagram photo. To the girl who loves Ryan Reynolds, golden retriever puppies, and hot yoga. This post is devoted to you.
But guess what? Name me one person that doesn't have a bit of basic bitch in them? I dare you. I bet that even the most grunged up, rarely bathed, chainsmoker hippy from Boulder, has admitted that a Taylor Swift song is catchy. Even being an Andy Warhol loving, vintage buying, independent film editor is basic. Striving to be as far from basic, just leads you back to utter basicness. I feel like I am describing the theory of relativity here...and most people over 30 will think that I am. We are all are #basic. It's 2017 baby, let's embrace it.
But really isn't basic just adapting to what is in style? What is so wrong with that? Things are in style for a reason. They taste, look, feel....great. And the greatness works for people!

Ingredients:
3 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 Tablespoon cinnamon
1 teaspoon nutmeg
1 teaspoon all spice
1 cup butter softened
2 cups sugar
4 eggs
1 cup canned pumpkin
1 cup sour cream
2 teaspoons vanilla
Streusel:
1 cup packed brown sugar
4 Tablespoons all-purpose flour
2 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
2 Tablespoon butter softened
Preheat oven to 350 degrees and grease a bundt cake pan with canola oil spray or butter. In a small bowl, combine all streusel ingredients together. Use a hand mixer if needed, or just aggressively stir with your own muscles. I a medium bowl, mix all dry ingredients together: flour, baking soda, salt, cinnamon, nutmeg, all spice. Using a mixer, beat together butter and sugar until creamy. Use a rubber spatula to scrape down the edges as the mixture beats together. Beat in the egg, one at a time, pumpkin, vanilla, and sour cream. Gradually add in the dry mixture until it is well blended. Add in half of the batter into the bundt pan, then sprinkle the streusel ingredients over the batter, making sure it does not touch the edges of the pan. Pour the rest of the batter over the streusel, until it is completely covered. Bake for 55 - 60 minutes or until a toothpick comes out clean.
