Old Bay Air Fryer Wings

Some people say there is nothing like a dame, I say there is nothing like a wing. Nothing in the world.

I keep trying to put my feelings towards wings into writing but it keeps coming out like an excerpt from fat Monica's diary in Friends. I just love them ok? Who doesn't love them? Name me one meat eating individual who would turn down a wing? It's the people's food.

My adoration of wings was manifested in Baltimore Maryland of all places. Sure, I've dabbled in chicken wings beforehand, but in Baltimore I was introduced to a happy hour special so memorable, I literally cite it as a transformative food moment for me. The Old Bay chicken wing. Being a family of Baltimore Orioles fans we are no stranger to the powers of Old Bay. I've used it on shrimp, obviously crabs and various other seafoods, but chicken. Old Bay on chicken? I haven't looked back since. This was a game changer to my life. Old Bay, and whatever it consists of, is one of my secret ingredient to the perfect wing.

The second and final secret ingredient to my perfect wings is the heating element. The air fryer is a mainstream cooking appliance that I have 100% committed to. Not only have I stashed away my Instant Pot, but I stashed it in my parents garage. In a Marie Kondo obsessive compulsive night, I threw away my crock pot (Side effects on that one tbd). The microwave and I share a good laugh over any sort of device that claims it can heat water. To make a long story short, I am pretty much not interested in having to store something to aid me cook other than a stove and oven. The air fryer is the exception to the rule. This thing is magical. Of course I was skeptical at first and threw in soggy potato strands attempting to make McDonalds esque french fries. It works, kind of.  If it were for my experimentation with veggies and attempting to replicate a deep fryer I would have tossed it away with all other appliances. But I was wrong. When it comes to meat, this thing is magic. I am 100% confident in telling that you can create delicious fried chicken, seafood, and yes wings, in your air fryer. It's amazing. It's quick, easy, and requires minimal clean up. The air fryer is my secret ingredient in making delicious, unbelievably crispy chicken wings. Obviously, deep frying is the authentic way to make restaurant style wings, but you cannot tell the difference in crispiness with these air fried wings.

2 lbs chicken wings
2 tbsp old bay seasoning
2 tbsp cornstarch
1 tsp ground pepper
1/2 cup Franks Red Hot sauce
1 tbsp worcestershire sauce
​6 tbsp butter melted
1/2 tsp Tabasco Sauce (or more to taste, I usually use 1 tsp)

Spray your air fryer basket with cooking spray. Add wings to basket (usually 6 - 8 at a time. You will need to cook in batches) and cook at 400 degrees for 25 minutes. Every five minutes shake the basket. When done cooking transfer to a wire rack to cool. Meanwhile combine melted butter, Franks sauce, worcestershire sauce, and tabasco in a large bowl. When wings are done cooking place in large bowl and toss to coat. Serve immediately with ranch, blue cheese, and celery.
