This is my go to fast, tasty meal. Like the epitome of go to. Like the "I make this once a week" kind of go to.
I've been wanting to share this pasta with you guys on the blog but honestly, every time I make it, my brother and I immediately eat it all. This is also my go to "I want to impress my friends without doing any work" go to kind of meal. You can whip this up in about one episode of House Hunters International. Does anyone watch regular House Hunters?
Do you know what I love most about this meal? I love Italian Sausage. I always use Hot Italian Sausage because I love spicy food and it doesn't even taste a hint spicy to me. So in reality, I'm nervous that the Sweet Italian sausage will taste like a Hershey bar to me. And if I'm going to be completely honest, I love how fast Italian Sausage defrosts. Let's be real, I buy meat in bulk, freeze it in bulk, and then agonize at 6pm about how I'm going to cook this 8 pound block of frozen chicken. Nobody likes chiseling out their chicken...
This is also a great meal to make when you swear there is nothing in the fridge. This is a full pantry raiding meal. When you think you don't have enough ingredients. You do.
Ingredients:
1 lb Sweet/Hot Italian Sausage
3 cloves of garlic minced
1/2 cup white wine
1/4 cup chicken broth
1 medium onion thinly sliced
1 tbs butter
1 14 1/2-ounce can diced peeled tomatoes with juices
1/2 cup light cream or half and half
salt and pepper (to taste)
1/4 cup fresh parsley
Method:
Melt butter in a large skillet over medium high heat. Add in chopped onion and garlic and sauté until golden brown and fragrant. Add sausage and crumble with the back of a wooden spoon until it is browned and cooked through (about 6 - 7 minutes). Drain the drippings from the pain, but leave a little because hello...flavor. Add wine and chicken broth and bring to a boil until the liquid almost evaporates. Add tomatoes and their juices and simmer for 4 minutes. Stir in cream and parmesan cheese and let the sauce thicken for about 5 minutes. Stir in the parsley. Season to taste with salt and pepper.
Cook pasta according to box instructions. Serve sauce over pasta and eat immediately.
