Have you ever watched the series Salt, Fat, Acid, Heat on Netflix? These ground turkey meatballs incorporate all four of the most crucial cooking elements to making a great dish.
It's been a while since Salt, Fat, Acid, Heat was released on Netflix but I still think about it almost every time I cook. I have never found a recipe that makes all four components featured in the show the star of the dish. Let's start off with the easiest, salt. It's easy enough to add table salt into any recipe but this one actually gets its saltiness from other elements. One great way to incorporate salt into your meals is through cheese. This recipe calls from shredded mozzarella cheese and grated parmesan. Both great ways to sneak in that delicious salty flavor that all eaters love.
Next comes acid. This one can be the most confusing. Not every recipe needs a splash of citrus or vinegar. However, you can find acid in many things like tomatoes for example. Yet for this dish, we take the traditional route and make a delicious lemon butter sauce. Speaking of butter it's time for everyone's favorite element of cooking, fat. This delicious garlicky butter sauce is key to this recipe. Lastly, comes heat. Now this is not an end all be all to this recipe, however I love to add a sprinkle of red pepper flakes to the lemon garlic butter sauce however if you are sensitive to heat, feel free to leave it out.
Ingredients:
2 pounds lean ground turkey
1 cup shredded mozzarella
1 egg
1tsp Italian seasoning
2 cloves garlic minced
1 tsp crushed red pepper flakes (optional)
4 tbsp unsalted butter
2 tbsp lemon juice (about one whole lemon juiced)
1/2 tsp rosemary
1/2 tsp thyme
1/2 cup fresh parsley
1 tbsp grated parmesan (for garnish)
1. Preheat the oven to 400 degrees F and lightly spray a 9x 13 baking dish with cooking spray.
2. Combine ground turkey, mozzarella, egg and Italian seasoning in a large bowl. Form into even sized meatballs and place into the baking sheet.
3. Bake your meatballs for 15 - 20 minutes until fully cooked through. Drain any excess fat with a spoon if needed.
4. In the meantime, melt butter in a sauce pan and add in garlic and red pepper flakes. Cook until garlic is fragrant, about 1 minute. Add in lemon juice, rosemary, thyme, and fresh parsley. Remove from heat and pour the butter sauce over the meatballs.
5. Sprinkle parmesan over meatballs and bake for another 5 minutes just until cheese is melted.
