You guys...I think I'm getting better at baking.
I always tell people I meet that I like cooking. "Oh can you make me funfetti cupcakes?" No...I like cooking, not baking. Big difference. If you read my earlier posts you will learn that I'm attempting to become more comfortable opening up that oven and sticking food inside of it, instead of always cooking on top of it.
Now it's not that I dislike baking per se. I'm just not very good at it. I'm going to share a little secret with you. About two years ago, I tried to take a pre-mature stab at this whole food blog thing, and to this day, I'm surprised I haven't made some sort of Buzzfeed post about disgusting foods or Pinterest fails with some of these photos that I put up. It was a bit painful. And no, this wasn't me in high school posting these pics. I was like a solid twenty one years old. So, I present you with exhibit A.

So many things to call out here. Let's start with the abstract angle. The way it captures the dials of the oven, along with empty pan in the background is visually stunning. It won't give you a migraine at all. Second, the size and shape of the cookies will always keep you on your toes. Am I going to get a small circular cookie? Or will I be lucky enough to get a chance to try the giant square cookies that have morphed into each other. See those golden brown edges? That takes talent. Also, the way those two cookies are sitting alone in that empty pan really demonstrates the artistic license that I took with this photo. Lastly, I would like to call out the slight green tint to these cookies that is evident in this photograph. This was a photo that I actually featured on my blog. This was a photo that I actually thought would compel people to read my recipes and follow my cooking. I had a bit to learn. (Ps. If anyone wants the recipe to the above photo I'm sure I can dig it up).
That all being said, I've been really trying to master the art of baking and I think I'm doing quite well. Let me know what you think of my latest recipe for chocolate chip cookies with pretzels. I may be opening up to the sweet department but come on, you've got to add a little salt to it...and use dark chocolate.
Ingredients:
3/4 cup butter, softened
3/4 cup granulated sugar
3/4 cup firmly packed dark brown sugar
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/4 cups plus 2 Tbsp. all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1 (12-oz.) package dark chocolate chips.
2 cups coarsely crushed pretzel sticks
Preheat the oven to 350 degrees Fahrenheit. Cream butter and sugar together using an electric mixer or a heavy duty standing mixer until creamy. Add in the eggs and vanilla, beating until it is all blended. In a medium sized bowl sift together flour, baking soda and salt. Gradually add the flour mixture into the butter. Beat in the chocolate chips and the pretzel sticks at a slow speed. Drop the dough by tablespoons onto a greased parchment paper lined baking sheet. Bake for 10 - 13 minutes until the edges are golden brown, or desired doneness.
