Cold Spicy Peanut Noodles

The only thing I love more than eating delicious food, is eating delicious food the next day. This recipe literally requires to be eaten as leftovers.

I have absolutely no qualms when it comes to eating cold leftovers. Cold lasagna...delicious. Chili literally includes the instructions in its name and must be eaten the next day cold. Leftovers take on a new form when it comes to pizza. I worship leftover cold pizza and will proudly admit that I sneak a few bites every now and then for breakfast. Needless to say, I'm not stranger to a cold dish, so when I saw the recipe for these peanut noodles, I knew I was game.

All in all it takes roughly 15 minutes to assemble these noodles and if you are an asian food lover like me, it's likely that you already have most of the ingredients in your pantry. After boiling the noodles and mixing the sauce in, you let them sit for 1 - 2 hours or however long you wish you wait before eating. That way they become cold and the saucy peanut flavor can develop. This recipe is the epitome of meal prep.

1 8oz package of soba noodles (or regular spaghetti)
1/3 cup creamy peanut butter
2 tbsp sesame oil
3 tbsps soy sauce
3 tbsp (or more to taste) chili garlic sauce​
2 cloves garlic
1 inch piece peeled ginger
2 tbsp rice wine vinegar
sliced green onions (to top)
sesame seeds (to top)

Cook pasta according to package directions. Drain and place in a large bowl. Meanwhile in a blender, add remaining ingredients and blend until completely smooth and pureed. Coat noodles with the sauce and stir to combine. Place noodles in the fridge for 1 - 2 hours or until you are ready to eat. Top with sliced green onions and sesame seeds. Enjoy
