Chocolate Peppermint Christmas Cookies

Chocolate and peppermint are just a few of my favorite things.

Sound of Music is on TV as I write this post currently, and I couldn't be more pleased. In high school my french teacher once legitimately kicked out a student from our classroom freshman year because he asked "What is Sound of Music?"  I couldn't agree more with her logic. Sound of Music should be installed in all curriculums ensuring that our younger generation gets properly cultured.  In fact, is that what is wrong with our younger generation? I think I may have cracked it.  Let's stream the soundtrack a la Shawshank Redemption to penetrate the masses.  Also, I got to play Liesel in my high school play so educating everyone on this topic would give me more things to brag about. 
Right now I'm so focused on how small Julie Andrew's waist is in this movie that it is making me feel guilty for posting about chocolate cookies. But tis the season. This Baroness drama is weighing heavier on my heart than my middle school mind could understand and I need some chocolate on chocolate to ease my pain. I mean she can't even throw the ball with the children...come on!  I suggest that everyone whip up a batch of these chocolate peppermint cookies to soothe your woes. This recipe was inspired by the Minimalist Baker.  I like it because it only has one stick of butter so you may be able to attain that Julie Andrews waist if you're lucky.

Ingredients:
​1/2 cup (1 stick) unsalted butter, softened
3/4 cup sugar
1 egg
1/4 tsp peppermint extract
1 1/4 cup all purpose flour
1/3 cup cocoa powder
1/4 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1 candy cane or 1/4 cup peppermint candies, finely crushed
1/3 cup dark, bittersweet or semisweet chocolate chips


Preheat oven to 350 degrees F. In a large bowl, cream the butter and sugar together for about 1-2 minutes. Add egg, peppermint extract and beat until light and fluffy. Make sure to scrape down the sides as you go to make sure everything is fully mixed. Mix flour, salt, cocoa powder, baking soda and powder in a small bowl.  Gradually add to the wet ingredients, mixing as you go.  Fold in the chocolate chips to the batter.  Chill the dough in the freezer for 10 minutes. Form the dough into small balls and place 1.5 inches apart on a greased or parchment lined baking sheet. Press down the tops of the balls and add more chocolate chips to the top if desired.  Bake for 10 - 12 minutes. Sprinkle the tops of the cookies with the crushed peppermint.  Transfer to a cooling rack and let rest until completely cooled.

Let's be serious, cookies are a food group this time of year. My favorite food group, to be exact, and I've gotta keep up with a variety of cookies to keep a good balance. These, for instance, need to be added ASAP. Always needing more chocolate in my life!

So the five main food groups are Cookies..."candy, candy canes, candy corn, and syrup"? (Buddy the elf)

If chocolate & peppermint are two of your favorite things, I have a recipe I have to send you. It's a chocolate fudge cake with chopped up Andes mints in it, mint buttercream frosting and chocolate ganache drizzled over top
