If you do not love chai, I question your sanity.
I can't remember when I started drinking Starbucks Chai Lattes, but it was definitely before college. I remember getting chai concentrate for Christmas in my stocking. I love everything about chai. It's such a perfect blend of sweet, yet spicy. Spicy as in literally "spicy." Filled with spices. It's so flavorful and unique. I recently purchased a big jar of cardamon, to aide my holiday baking. Turns out it is the main ingredient in chai.
When I went to college in Boston, we could use our "meal points" at Starbucks. This meant, I often forgoed consuming lunch or dinner and opted instead to get a Grande Chai Latte. I have since stopped drinking these, because turns out, they are quite caloric, however I treated myself to one yesterday afternoon. The taste immediately brought me back to walking down Comm Ave, going to class. It's so funny how a taste or a smell can immediately bring you back to a memory. I have committed to making a ton of Christmas cookies this season and I wanted to back something unique. Of course, I will have your standard ginger bread, and sugar cookies but I wanted to...well "spice things up." What better way than with chai! This recipe is basically a recipe for sugar cookies, with the addition of the chai seasoning blend. I topped mine with a white chocolate frosting to make things a bit more festive, but these cookies are delicious on their own. I adapted this recipe from mybakingaddiction.com
Ingredients:
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1 1/2 cups white sugar
1/4 teaspoon black pepper
2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon all spice
1 cup unsalted butter, softened
1 large egg
1/2 teaspoon vanilla extract
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside. In a medium bowl mix together white sugar, pepper, cinnamon, cardamom, ginger, cloves, and all spice. Reserve 1/4 cup of the sugar mixer to be used later for dusting. Add in the remaining sugar to a large mixing bowl. Cream together the butter and sugar mixture until light and fluffy (roughly five minutes). Add in one egg and vanilla extract and mix until fully combined. In a separate bowl, mix together, flour, baking soda, and baking powder. Combine the flour mixture to the butter mixture and slowly blend until combined. Take about 2 teaspoons worth of dough and form into a small ball. Then, roll the cookie dough in the remaining 1/4 cup of sugar mixture. Place on a baking sheet. Repeat until all the dough is gone. Bake for 8 - 10 minutes.
