Essentially, my family goes a little nuts for anything buffalo. They also love stuffed jalapeños, so this recipe is guaranteed to be a winner.
Do you guys still have the kids table at your family gatherings? My cousins and I are now all college age or older but we still just gravitate towards the end of the table on family gatherings. Even though we are a predominantly Italian family, I can't help but think of buffalo wings every time I think of that kids section of the table. My grandma would take us on a family vacation with 17 people every single year of my life growing up. I can't imagine the number of buffalo wings we consumed during those vacations as kids. It's a miracle my stomach lining is still in tact. One super bowl my brother and my cousin had a wing eating contest and my brother had to go to the hospital a week later for stomach ulcers. I swear we are a classy family. We only got kicked out a restaurant once!
The other non traditional food I associate with my family is stuffed jalapeños. Yeah, we have a thing for spiciness I guess. We make them every year as a Thanksgiving appetizer. After all, nothing celebrates the unity of natives and pilgrims like a cheese stuffed pepper. We started making these about five or so years ago and man are they a hit. Regardless of the event, stuffed jalapeños, or jalapeño poppers are always the first appetizer to go. My cousin once legitimately panicked when we forgot them one year.
I really have no idea why it has taken me this long to put this combination together. Seriously, I basically always make buffalo chicken dip, or wings, alongside stuffed peppers for every birthday, tailgate, or party of any kind. Why didn't I think of stuffing jalapeños with buffalo chicken? Well let me tell you, it is a flavor explosion that isn't for the faint of heart. You need to be down for spice if you want to get into this recipe, but if you're a fan of either popular appetizer, which most people are, you are SURE to love this amazing combination.
Ingredients:
8 oz cream cheese, softened
1/3 cup blue cheese dressing (plus more for dipping)
1 tsp garlic powder
1 cup finely diced chicken (I use rotisserie shredded)
2 green onions, sliced
1/4 cup buffalo wing sauce (I use Frank's Red Hot)
10 jalapeno peppers
Ranch dressing (for serving)
Preheat your oven to 350 degrees F. Line a rimmed baking sheet with a silicone baking mat or parchment paper. Using gloves if needed, slice each jalapeno in half, lengthwise. Using a spoon, scrape out and discard the seeds. Place jalapeños on the baking sheet. Beat cream cheese with a hand held mixer until light and fluffy. Add in blue cheese dressing, garlic powder, and chicken. Stir in the buffalo wing sauce and green onions. Spoon in the buffalo chicken mixture evenly into each jalapeno pepper. Bake in the preheated oven for 30 minutes, until the top is golden brown. Serve with ranch dressing or extra blue cheese dressing
