So you know that pesto sandwich I posted before? I turned it into a pasta salad.
I'm writing this post as a way to have a productive break from packing. I'm headed up to Lake George tomorrow with my family for a week. I have a love hate relationship with packing. I have a hate relationship with unpacking. But with packing you have the excitement and thrill that you are about to embark on a nice, relaxing, work free vacation. The hate comes from the fact that I feel that it is necessary to bring that tee-shirt I haven't worn since 8th grade with me. Hey, you never know what elements might come forth where you are going to need that tee-shirt. You also may need three sweatshirts, and six pairs of jeans, even though its forecasted to be 95 degrees all week. Again, you never know.
As I'm writing this post I'm also going through cooking withdrawal. I'm in the process of cleaning all the food out of my fridge, but I'm so hungry and so wishing I had leftovers of this pesto pasta. My stomach is literally rumbling. Earlier this week, I figured I would finally give up on trying to nourish my fragile basil plant. I plucked all of its leaves and turned it into this delicious pesto. As I mentioned in my previous post. My basil plant decided it doesn't like sun, it doesn't like shade, it doesn't like water, and it doesn't like growing. Meanwhile, my parent's have basil that is literally taking over their deck. Totally stealing theirs for the rest of the Summer.

1 1/2 cups basil pesto
1/2 cup sun-dried tomatoes packed in oil diced
1/2 cup roasted red pepper diced
1/4 cup grated parmesan cheese
1 pound bow-tie pasta cooked according to package directions
Combined pasta with pesto, sun-dried tomatoes, red peppers. Top with the grated parmesan cheese.
