Sure, slow cookers can be convenient, but this shredded chicken only needs a half hour to cook. There is nothing time consuming about this recipe, except maybe deciding which delicious toppings to include.
I have to admit, my town really kills it with the whole fall thing. Think Stars Hollow from Gilmore girls but three times the size. Basically three times the fall activities to take part in. It's only the second day of fall but I feel like I have exhausted myself already. Just to give you an idea of how quintessentially sickeningly cute my town is, we have an actual cider mill, which is wear I purchased the cider used in this recipe from. In one day I visited a pumpkin patch, went to a cider mill that had an on site display of baby chicks, and then bought the rest of my needed ingredients at a farmer's market. Most of my peers quickly ran away from the New England bubble that is autumn, but I prefer to spend the months of September and October pretending I am in a Hallmark movie. Now if I can just find love at first site in one of these quaint destinations.
Don't worry, I already exhausted myself with the fall baking with making apple cider donuts. Were they good? Yes, but were they time consuming? Giant yes. They also left me with a large supply of fresh apple cider in my fridge. I love the flavor of cider but I'm not really one to just pour me a raw glass of it. Mix it with some alcohol and now we are talking. I wanted something quick and easy to make with it, and preferably savory since I already reached my sweets quota for the season.
I have made this chicken numerous times but this is the first time I am sharing it on the blog. This chicken is braised in cider, bbq sauce and other tasty ingredients to make the perfect combination of sweet, salty, and tangy flavor. I actually created this recipe when I needed a reason to use some Angry Orchard ciders that were left at my house. So if you have some hard ciders on hand, feel free to use them too!
The best part about this shredded chicken is you do not need to wait hours and hours for it to be made in a crock pot. It actually only takes about 30 minutes to cook in the braising liquids. I choose to make some pulled chicken sandwiches but you can do anything you want with this shredded chicken. Top a salad with it or use it to make some autumn flavored tacos!
Ingredients:
2 tbsp olive oil
salt and pepper
2 pounds boneless, skinless chicken breast
1 cup apple cider
1 tbsp apple cider vinegar
1/2 cup barbecue sauce
1 cup chicken broth
2 tbsp yellow mustard
1 tbsp worcestershire sauce
For the sandwiches:
4 hamburger or sandwich buns
bread and butter pickles
coleslaw
pickled onions
Sprinkle chicken with salt and pepper. In a large dutch oven, heat 2 tbsp olive oil over medium heat. Place chicken in the pan and sear on both sides until golden brown. About 2 - 3 minutes. Add in apple cider, vinegar, barbecue sauce, chicken broth, mustard, and worcestershire sauce. Bring to a boil, cover and reduce heat to low. Cook for 20 - 25 minutes. Remove chicken from pan and set aside. Bring the leftover sauce to a simmer and let it reduce about half way. While sauce is reducing shred the chicken with two forks. Add chicken back to the pot and stir to combine. Remove from heat and serve as sandwiches or however you desire.
