Do you know that people are putting butter in their coffee and it is for a diet.
Ketogenics is what they call it. Basically, you replace insulin producing carbs with healthy fats. The idea being that your body instead burns fat rather than sugar produced from the carbs. Don't quote me on this. I never did well in science. Moral of the story...low carb, high fat.
I wouldn't say that I am a role model nutritionist, but I do generally eat pretty healthy. Much of this is due to the fact that I don't like sweets. My downfall however is...duh duhhhh. Carbs! Love them, can't get enough of them. I'm not popping Lays potato chips and fettuccine alfredo on a regular basis, but my weakness is "healthy" carbs, if there is such a thing. You know those packing peanuts that they try to pawn off a healthy veggie chips? Love them. The mysterious rice cakes that should be served at a space station...sign me up. I just love processed puffed food that has salt? Is that so wrong? Oh yah popcorn...
When looking at my eating patterns, I do eat a lot of carbs. I eat eggs on whole wheat toast in the morning, pretzels and hummus for snacks, and have my body weight in processed puffs of air. Which really is a lot considering it's processed air puffs. Also guess what? Bananas...yah, nature's gift to the human race....loaded with carbs?
So the the name of the game is healthy fats. Avocados, meats, cheese, eggs, olive oil. This whole ketogenics thing is pretty appealing to me. I read online that cheese is incredibly nutritious and that is really all I need to hear. Swapping carbs for cheese....i'll take it! Still haven't brought myself to buy a block of cheese in fear that it will be gone tomorrow, but I did buy some string cheese and that is exciting. Cheese is something I have stayed far away from the past few years so I would love for it to become my weight loss secret. Will keep you posted.
That brings me to my latest recipe. I have become super into making meatballs with ground chicken. So many options to spice them up with different flavors and seasoning. Plus, they are super healthy. The one thing that I cherish in my diet is hot sauce of any kind. Tabasco, Frank's, Cholula, Sriracha, SO good. Picking my favorite would be like picking my favorite child. There is a time and place for all. Tonights dinner was inspired by the buffalo wing, so Frank's Buffalo was in need. I have to admit, for the most part, I'm a Franks loyalist. Oh and guess what? 0 carbs in Frank's. Wait hold up...zero carbs in this entire meal! Keto maniacs hit me up! The best part about this is that it takes a told of 30 minutes to make!Minimal ingredients, minimal prep.

1 stick celery finely chopped
3 cloves garlic minced
2 green onions minced
1/2 tsp Kosher salt
1/4 tsp pepper
1/3 cup Frank's Buffalo sauce (Or another Buffalo sauce of your choice)
Crumbled Blue Cheese (optional)
Blue Cheese Dressing (optional)
Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper and set aside. In a large mixing bowl, mix ground chicken, celery, garlic, green onion, salt and pepper. Using a spoon, form meatballs into desired size and place on the baking sheet. Bake for 20 - 25 minutes. Remove from onion and place meatballs in a bowl. Toss with Frank's Buffalo sauce. Serve immediately with dressing of your choice.
